Tangy green bean salad with olives, tomatoes, and feta. Dressing of red wine vinegar, garlic, and oregano.
Ingredients:
  • 2 pounds fresh green beans, trimmed
  • 0.25 cup olive oil
  • 2 cloves garlic, minced
  • 1 cup kalamata olives, pitted and sliced
  • 2 tomatoes, seeded and chopped
  • 2 tablespoons red wine vinegar
  • 1 tablespoon chopped fresh oregano
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 1 (8 ounce) package crumbled feta
  • 1 bunch fresh oregano sprigs
Instructions:
  • 1. Boil a large pot of salted water over medium heat. Cook green beans until slightly tender yet still crisp, about 8 to 10 minutes. Drain and shock beans in ice water to halt cooking. Finally, drain again and transfer to a serving dish.
  • In a skillet over medium heat, warm up olive oil. Quickly sauté garlic for 30 seconds. Remove from heat and mix in olives, tomatoes, vinegar, oregano, salt, and pepper.
  • Drizzle mixture over green beans and gently toss until well combined. Finish with a generous sprinkle of feta cheese and a garnish of fresh oregano sprigs. Refrigerate for a minimum of 3 hours before enjoying.
