Grill marinated meats and serve with fresh salad for a hearty and delicious BBQ feast.
Ingredients:
  • 1 small barbecue meat pack
  • 40.00 ml chopped fresh oregano
  • 2 tsp fresh thyme leaves
  • 2 cloves garlic, crushed
  • Zest and juice of 1 lemon
  • 125ml olive oil
  • Pinch sugar
  • Sea salt & freshly ground black pepper, to taste
  • 3 Lebanese cucumbers, halved lengthways, thickly sliced
  • 2 vine-ripened tomatoes, chopped
  • 250.00 ml black olives, drained
  • 1 small red capsicum, seeded, chopped
  • 1 red onion, halved, thinly sliced
  • 420g can cannellini beans, drained
  • 200g feta, cubed
  • Crusty bread, to serve
  • Extra lemon, to serve
Instructions:
  • Place the steak and chops from the BBQ pack in a large shallow dish. In a small jug, mix oregano, thyme, garlic, lemon zest, and olive oil. Pour half of the mixture over the meat, ensuring it's evenly coated. Cover and refrigerate for 30 minutes (or longer if desired). Combine lemon juice, sugar, salt, and pepper with the remaining oil mixture to use as a salad dressing later.
  • Season the marinated meat generously with salt and pepper. Cook the meat alongside the sausages on a preheated barbecue grill until done to your preference.
  • In a big serving bowl, mix the cucumber, tomatoes, olives, capsicum, onion, beans, and feta. Pour in the dressing and mix well. Serve with meat, extra lemon, and crusty bread.
