Exciting Mediterranean chicken with zesty lemon and savory feta.
Ingredients:
  • Ground black pepper, to taste
  • 2 lemons, rind finely grated, juiced
  • 100g feta, crumbled
  • 2 garlic cloves, crushed
  • 20.00 ml chopped fresh herbs (basil, oregano or rosemary)
  • 100ml (5 tbsp) olive oil
  • 8 chicken drumsticks, skin removed
  • Baked potatoes, to serve
  • Green salad, to serve
  • Black olives, to serve
Instructions:
  • In a medium bowl, mix lemon rind, lemon juice, feta, garlic, herbs, and olive oil to form a flavorful paste. Season with pepper. Coat each chicken drumstick well in the mixture and place on a plate.
  • Heat up your barbecue or chargrill on medium-high heat.
  • Grill the drumsticks on the preheated barbecue or chargrill, turning occasionally, for 20 minutes or until fully cooked, making sure not to char them. Serve alongside baked potatoes, a fresh green salad, and black olives.
