Cozy up with citrus cranberry lamb alongside fresh green beans.
Ingredients:
  • 62.50 ml cranberry jelly
  • 2 tsp finely grated orange rind
  • 65.63 gm orange juice
  • 2 tsp chopped fresh rosemary leaves
  • 4 lamb leg chops
  • Steamed green beans, to serve
Instructions:
  • In a shallow glass or ceramic dish, mix together jelly, orange rind, orange juice, oil, garlic, and rosemary. Add the chops and ensure they are coated well. Cover and refrigerate for 2 hours, if possible.
  • - Preheat a frying pan over medium-high heat, then take the lamb out of the marinade. - Cook the lamb for 4 to 5 minutes on each side (for medium doneness or to your preference), while brushing with the marinade. - Move the lamb to a plate, cover, and let it rest for 5 minutes. - Serve the lamb with beans.
