Orange-Frosted Cranberry Cookies

Delicious orange and cranberry frosted cookies - a perfect combination of flavors.
Ingredients:
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 cup butter or margarine, softened
  • 1 teaspoon grated orange peel
  • 2 tablespoons orange juice
  • 1 egg
  • 2 1/2 cups Gold Medal™ all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups coarsely chopped fresh or frozen cranberries
  • 1/2 cup chopped nuts, if desired
  • 1 1/2 cups powdered sugar
  • 1/2 teaspoon grated orange peel
  • 2 to 3 tablespoons orange juice
Instructions:
  • Preheat oven to 375°F and grease a cookie sheet with cooking spray.
  • In a spacious bowl, blend granulated sugar, brown sugar, butter, 1 teaspoon of orange zest, 2 tablespoons of orange juice, and the egg using an electric mixer on medium speed or mix with a spoon. Mix in flour, baking soda, and salt. Add in cranberries and nuts. Spoon the dough onto a cookie sheet in rounded tablespoonfuls about 2 inches apart.
  • Bake the cookies until the edges and bottoms turn light golden brown, which should take around 12 to 14 minutes. Afterward, transfer them from the cookie sheet to a cooling rack and let them cool completely for about 30 minutes.
  • Combine all frosting ingredients in a small bowl and mix until smooth and easy to spread. Use to frost cookies.
