Try this delicious orange cream cheese frosted carrot slice - a family favorite, especially for the kids!
Ingredients:
  • 150g butter, softened
  • 118.80 gm firmly-packed brown sugar
  • 100g pecans, finely chopped
  • 200g carrot
  • 99.00 gm self-raising flour
  • 165.00 ml plain flour
  • 171.60 gm buttermilk
  • 125g spreadable cream cheese
  • 20g butter, softened
  • 75.00 gm pure icing sugar
  • 1 orange, rind finely grated
Instructions:
  • Preheat your oven to 180°C. Grease a 3cm-deep, 18cm x 28cm slab pan and line it with baking paper.
  • In a mixing bowl, cream butter and brown sugar until light and fluffy. Remember to scrape down the sides. Mix in pecans and carrots until well combined.
  • Sift the flours into a bowl. Whisk together the buttermilk and eggs. Add half of the flour and buttermilk mixtures to the carrot mixture, mixing well. Repeat with the remaining flour and buttermilk mixtures.
  • Pour the mixture into the prepared pan, ensuring the surface is smooth. Bake for 20-25 minutes or until a skewer inserted into the center comes out clean. Let it sit in the pan for 15 minutes, then transfer onto a wire rack to cool completely.
  • Prepare orange and cream cheese frosting: With an electric mixer, whip cream cheese and butter until light and fluffy. Incorporate icing sugar and orange zest until fully blended. Smooth the frosting over the chilled slice, slice into pieces, and present.
