Delicious carrot bread with warm spices, sweet sugars, crunchy pecans, and fragrant vanilla.
Ingredients:
  • 0.75 cup sunflower seed oil
  • 0.75 cup white sugar
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 large eggs, beaten
  • 1 cup grated carrots
  • 0.5 cup chopped pecans
  • 0.5 teaspoon vanilla extract
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 Degrees C) and generously grease and flour a 9x5-inch loaf pan.
  • Mix sunflower oil and both sugars in a large bowl with an electric mixer until fully blended.
  • In a bowl, sift together flour, baking powder, baking soda, cinnamon, and salt. Gradually fold dry ingredients into wet ingredients. Add beaten eggs and mix until combined. Fold in carrots, pecans, and vanilla. Pour batter into the prepared pan.
  • Bake in the center of the preheated oven until a toothpick inserted in the middle comes out clean, approximately 1 hour.
  • Take out of the oven and allow it to cool in the pan for 10 minutes. Then, transfer it onto a wire rack to cool thoroughly.
