Bake a fragrant carrot and cranberry loaf for a cozy home.
Ingredients:
  • 300g self-raising flour
  • 375.00 ml carrot, coarsely grated
  • 220g brown sugar
  • 65g dried cranberry
  • 2.50 gm ground cinnamon
  • 2 lightly whisked free range eggs
  • 125ml milk
  • 125ml vegetable oil
  • 40.00 ml pepitas (pumpkin seeds)
Instructions:
  • Preheat your oven to 180C and prepare a Coles Cook & Dine Loaf Pan by greasing and lining it, leaving the long sides to overhang.
  • In a large bowl, mix together self-raising flour, grated carrot, brown sugar, dried cranberries, and 1 teaspoon of ground cinnamon.
  • Combine 2 lightly whisked eggs, milk, and vegetable oil, then mix well. Transfer the mixture to the pan and top with 2 tablespoons of pepitas (pumpkin seeds).
  • Bake for 1 hour or until a skewer comes out clean when inserted in the center. Serve the warm loaf, or cool and wrap.
