Brighten your plate with a vibrant red cabbage and cranberry coleslaw!
Ingredients:
  • 1 mini red cabbage
  • 1/2 small red onion, finely grated
  • 1 large carrot, peeled, grated
  • 117.50 gm light sour cream
  • 21.00 gm lemon juice
  • 62.50 ml red currant jelly
  • 62.50 ml craisins, roughly chopped
Instructions:
  • Finely shred cabbage, removing thicker white stems. Place in a large bowl with onion and carrot, toss to combine.
  • Prepare the dressing by mixing sour cream, lemon juice, and red currant jelly in a bowl. Season with salt and pepper. Whisk until smooth. Drizzle the dressing over the cabbage, add craisins, toss well, and enjoy!
