Tangy marinated green beans baked with bacon, onion, and almonds for a flavorful twist.
Ingredients:
  • 12 slices bacon, cut in half
  • 2 pounds fresh green beans, trimmed and snapped
  • 1.5 medium onions, chopped
  • 6 tablespoons apple cider vinegar
  • 6 tablespoons white sugar
  • 0.5 cup blanched slivered almonds
Instructions:
  • In a spacious deep skillet, crisp up the bacon on medium-high heat until perfectly browned. Place the bacon on paper towels to drain, and keep the flavorful drippings in the skillet.
  • In a large saucepan, add fresh green beans and enough water to cover them by 1 inch. Cover and bring to a boil over medium-high heat. Cook until the beans are bright green and tender, about 8 to 10 minutes. Drain the water before serving.
  • In a 2 quart casserole dish, layer green beans, onions, bacon strips, and almonds. In a skillet, heat reserved drippings and stir in vinegar and sugar until sugar is dissolved. Drizzle mixture over ingredients in the dish. Cover and refrigerate for at least an hour, preferably overnight.
  • Preheat the oven to 350 degrees F (175 degrees C). Bake for 45 minutes uncovered until the onions are tender and the almonds are toasted. Check at 30 minutes and cover if needed.
