Delicious green bean almond salad with tomatoes, feta, olive oil, garlic, onions, and Italian oregano.
Ingredients:
  • 2 boxes (7.4 oz each) Cascadian Farm® frozen organic French-cut green beans with toasted almonds
  • 1 tablespoon olive oil
  • 1 medium onion, sliced
  • 2 cloves garlic, finely chopped
  • 1 can (14.5 oz) Muir Glen™ organic diced tomatoes, undrained
  • 1/8 teaspoon crushed red pepper flakes, if desired
  • 1/2 cup crumbled feta cheese (2 oz)
Instructions:
  • Prepare the beans following the instructions on the boxes, making sure to save the almonds; then, drain the beans.
  • In a 10-inch skillet over medium heat, sauté onion and garlic in oil for 3 to 4 minutes, stirring often, until onion is crisp-tender.
  • Add the tomatoes, oregano, and pepper flakes, and bring the mixture to a boil. Reduce the heat and simmer uncovered for about 5 minutes, stirring occasionally, until the sauce is thickened and most of the liquid has evaporated.
  • Arrange the drained beans on a serving platter, then generously top them with the flavorful tomato mixture. Finish off with a generous sprinkle of cheese and the reserved crunchy almonds.
