Refreshing green bean salad with feta and cherry tomatoes, ideal for BBQs or as a versatile side dish.
Ingredients:
  • 4.5 tablespoons extra-virgin olive oil
  • 3 tablespoons red wine vinegar
  • 2.5 tablespoons chopped fresh basil
  • 1 large clove garlic, minced, or to taste
  • salt and freshly ground black pepper to taste
  • 0.5 cup slivered almonds
  • 1 pound fresh green beans, trimmed and halved
  • 0.75 cup crumbled feta cheese
  • 1.5 cups cherry tomatoes, halved
  • 2 tablespoons chopped red onion, or to taste
Instructions:
  • Combine olive oil, red wine vinegar, basil, garlic, salt, and pepper in a jar. Let the flavors meld overnight for maximum taste.
  • Toast almonds in a small dry skillet over medium heat until lightly browned, flipping frequently, for 2 to 3 minutes. Transfer to a plate and allow to cool completely.
  • Boil a pot of salted water. Cook green beans until tender crisp for 2 minutes. Transfer beans to ice water, then drain and pat dry thoroughly. Place beans in a bowl, add feta cheese, tomatoes, and red onions; mix well.
  • Drizzle the dressing over the green beans and sprinkle with toasted almonds. Gently toss to coat. Refrigerate for 2 hours before serving to let the flavors meld.
