Zesty onion and dill dressing elevates this refreshing green bean salad, perfect with potatoes.
Ingredients:
  • 1 pound fresh green beans, trimmed
  • 0.25 cup chopped fresh dill
  • 2 tablespoons minced red onion
  • 2 tablespoons white wine vinegar
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon salt, or more to taste
  • 0.25 teaspoon freshly ground black pepper
  • 0.25 cup extra-virgin olive oil
Instructions:
  • 1. Boil salted water and cook green beans until crisp tender, approximately 7 minutes. Drain and refresh under cold water or ice to halt cooking. Transfer to a bowl.
  • Once the beans have cooled, mix dill, onion, vinegar, Dijon mustard, salt, and pepper in a medium bowl. Gradually whisk in the oil until well combined. Allow it to sit for 10 minutes.
  • Drizzle the dressing over the green beans and toss them delicately to ensure an even coating. Let the flavors meld in the fridge for a minimum of 2 hours or for up to 3 days before enjoying.
