Marinated Carrots

Generational carrot dish, can be enjoyed hot or cold. Use pre-cut coins or baby carrots for convenience. Irresistible!
Ingredients:
  • 2 pounds carrots, sliced
  • 1 green bell pepper, seeded and diced
  • 1 small onion, diced
  • 0.5 cup white vinegar
  • 0.25 cup vegetable oil
  • 1 (10.75 ounce) can condensed tomato soup
  • 0.75 cup sugar
Instructions:
  • In a saucepan, simmer the carrots in lightly salted water until almost tender, about 5 minutes based on thickness. Drain and combine with bell pepper and onion in a large bowl.
  • While the carrots are cooking, mix vinegar, oil, tomato soup, and sugar in a saucepan. Bring to a boil, let it simmer for 1 minute. Drizzle the warm dressing over the vegetables. Serve right away or refrigerate in a sealed container for up to 1 week.
