Delight in a classic Copper Pennies Salad with sweet-tangy marinated carrots, celery, onion, and bell pepper.
Ingredients:
  • 1 (10.5 ounce) can condensed tomato soup
  • 0.667 cup white sugar
  • 0.5 cup distilled white vinegar
  • 0.333 cup vegetable oil
  • 2 pounds carrots, sliced
  • 1 stalk celery, chopped
Instructions:
  • In a saucepan, combine condensed soup, sugar, vinegar, and oil. Bring to a boil, stirring well. Remove from heat and let cool before using.
  • Meanwhile, in a large pot of boiling water, cook carrots until just tender, about 10 minutes.
  • After draining the carrots, place them in a mixing bowl with the onion, bell pepper, and celery. Pour the soup mixture over the vegetables and stir well to coat. Refrigerate for 8 hours or overnight, then enjoy!
