Grilled carrots marinated in savory soy-ginger marinade. Delicious!
Ingredients:
  • 6 large carrots, halved
  • 3 tablespoons light soy sauce
  • 3 tablespoons rice vinegar
  • 2 cloves garlic, minced
  • 2 teaspoons minced fresh ginger root
  • 0.25 teaspoon Chinese five-spice powder
Instructions:
  • 1. Boil a large pot of water until vigorously bubbling; gently drop in the carrots and parboil for 5 minutes. Drain the carrots and give them a refreshing cold water bath.
  • Combine soy sauce, rice vinegar, garlic, sesame oil, ginger, and five-spice powder in a large glass dish. Add carrots and let marinate for 30 minutes.
  • Preheat an oiled outdoor grill with the rack set 4 inches from the heat source. Grill carrots in an oiled wire-hinged vegetable basket or directly on the rack, turning frequently for 10 minutes until lightly charred.
