Enhance Asian dishes with tangy apple cider vinegar for a perfect balance of flavors.
Ingredients:
  • 75g (1/4 cup) white miso paste
  • 60ml (1/4 cup) light soy sauce
  • 40.00 gm caster sugar
  • 40.00 ml apple cider vinegar
  • 2 tsp fresh ginger, finely grated
  • 2.00 tsp sesame oil
  • 1.5kg pork ribs, each rack cut in half
  • 85g (1/3 cup) Kewpie or whole egg mayonnaise
  • 20.00 ml apple cider vinegar
  • 5.90 gm hot English mustard
  • 1/2 small wombok, finely shredded
  • 2 carrots, peeled, coarsely grated
  • 2 green shallots, trimmed, sliced
Instructions:
  • Mix the miso, soy sauce, sugar, vinegar, ginger, and oil in a bowl.
  • In a large saucepan or stockpot, add enough water to reach just below the top of a trivet or upturned heatproof saucer. Brush the ribs with one-third of the miso mixture and place them on a heatproof plate. Put the plate on the trivet, cover, and simmer over medium heat until the ribs are tender, about 40 minutes.
  • In a large bowl, mix together mayo, vinegar, mustard, and oil. Let it sit for 20 minutes to enhance the flavors. Add wombok, carrot, and shallot, then toss to combine.
  • Preheat the barbecue grill or chargrill to high heat. Brush the remaining glaze over the ribs and grill them for 3-4 minutes on each side until they turn golden. Serve with slaw.
