Miso-Glazed Black Cod

Delicious miso-glazed black cod inspired by Chef Nobu Matsuhisa, with minimal marinating required.
Ingredients:
  • cooking spray
  • 3 tablespoons white miso paste
  • 2 tablespoons water
  • 2 tablespoons mirin (Japanese sweet wine)
  • 2 tablespoons sake
  • 1 tablespoon brown sugar
  • 2 (7 ounce) black cod fillets
Instructions:
  • Assemble your ingredients.
  • Position the oven rack 6 inches below the broiler and preheat the broiler. Cover a baking sheet with aluminum foil and lightly grease it using cooking spray.
  • In a small skillet over medium heat, combine miso, water, mirin, sake, and brown sugar. Simmer until slightly thickened, about 1 to 3 minutes. Remove from heat and cool completely, about 3 to 5 minutes.
  • Lay the cod fillets on the baking sheet. Brush the fillets with the miso mixture and let them marinate at room temperature for 15 to 20 minutes.
  • Place in the preheated oven and broil for 5 minutes. Rotate the baking sheet 180 degrees and continue broiling until the fish easily flakes with a fork, about 5 minutes more. Remember to remove any pin bones before serving.
