Miso-glazed tofu and black rice bowl

Try a speedy and light miso-glazed tofu bowl with black rice - ready in just 20 minutes!
Ingredients:
  • 40.00 ml mirin
  • 48.00 gm Hikari White Miso Paste
  • 28.60 gm honey
  • 2 tsp rice wine vinegar
  • 5 tsp sesame oil
  • 500g firm tofu, cut into 12 slices
  • 2 bunches broccolini, trimmed, chopped
  • 1 large red capsicum, deseeded, coarsely chopped
  • 2 garlic cloves, thinly sliced
  • 4cm-piece ginger, peeled, cut into matchsticks
  • 4 green shallots, cut into 4cm lengths
  • 335g (2 cups) cooked black or brown rice
  • Mixed sesame seeds, to serve (optional)
Instructions:
  • In a small bowl, mix together the mirin, miso, honey, and vinegar. Let it sit for later.
  • Heat up fragrant sesame oil in a sizzling wok. Sear tofu in two batches until beautifully golden, around 2 minutes per batch. Gently move to a plate using a slotted spoon.
  • Toss broccolini into the wok and stir-fry for 2 minutes until tender-crisp. Add capsicum and stir-fry for an additional minute until tender-crisp. Introduce garlic, ginger, and shallot to the mix and stir-fry for 1 minute until fragrant. Pour in 2 tablespoons of miso mixture and stir-fry for 1 more minute. Transfer everything to a bowl.
  • Pour the rest of the miso mixture into the wok and cook until slightly thickened for about 30 seconds. Add the tofu and cook, turning, until coated and sticky for about 1 minute. Remove from heat.
  • Serve the rice in bowls, then top with the vegetable mixture and tofu, drizzle with any leftover sauce, and sprinkle with sesame seeds for extra flavor.
