Indulge in refreshing creamy cucumber soup with blended green onions, yogurt, and a touch of dill for a cool and delicious twist on fresh cucumbers.
Ingredients:
  • 2 large cucumbers
  • 1/2 cup chopped green onion
  • 1 teaspoon dried dill weed
  • 1 container (16 ounces) plain yogurt
Instructions:
  • Peel the cucumbers, then slice them in half lengthwise to remove the seeds and cut into pieces.
  • Combine cucumbers and remaining ingredients in a blender or food processor. Blend on high speed until smooth. Chill in the refrigerator for 1 hour before serving.
  • Top the soup with fresh dill weed or radish slices, if preferred.
