Refreshing chilled cucumber soup with mint, dill, garlic, yogurt, and sour cream for a light lunch.
Ingredients:
  • 2 large cucumbers - peeled, seeded, and diced
  • 2 cups vegetable broth
  • 1.3333333730698 cups sour cream
  • 1.3333333730698 cups plain yogurt
  • 1 clove garlic, minced
  • 0.5 cup chopped fresh mint
  • 0.5 cup chopped fresh dill
Instructions:
  • In a large bowl, blend together cucumbers, broth, sour cream, yogurt, and garlic using an immersion blender until smooth. Stir in mint and dill. Chill in the refrigerator for about 1 hour before serving.
