Cool and quick cucumber soup recipe - perfect for hot days! Ready in just 10 minutes, no cooking needed.
Ingredients:
  • 2 large cucumbers (about 1 1/2 pounds total)
  • 2 tablespoons chopped onion (white, red, or green)
  • 1/2 cup buttermilk
  • 1/4 cup sour cream
  • 1 tablespoon rice vinegar
  • 1 tablespoon extra virgin olive oil
  • 2 tablespoons fresh dill, chopped
  • 1/2 teaspoon kosher salt
  • Pinch black pepper
Instructions:
  • Prepare the cucumbers, onion, and dill: Peel, remove seeds, and coarsely chop the cucumbers. Finely chop the onion and dill.
  • Make deliciously smooth blend by combining all ingredients in a blender. Adjust seasonings to your liking, adding more salt and pepper if desired. This mixture can be prepared in advance and refrigerated for later use.
  • Chill the soup in the refrigerator until cold in a container.
  • Presentation: Ladle the soup into bowls and elegantly drizzle with olive oil and delicately garnish with a dill feather.
