Green bean and snow pea pasta salad

Elevate pasta with beans and snow peas for a refreshing summer salad.
Ingredients:
  • 200g spaghetti, broken into 5cm lengths
  • 250g green beans, trimmed
  • 250g snow peas, trimmed
  • 1 medium zucchini, grated
  • 40.00 ml drained baby capers
  • 1/2 small red onion, finely chopped
  • 40.00 ml chopped fresh dill
  • 128.75 gm French dressing
  • 1 medium avocado, finely chopped
Instructions:
  • Prepare the pasta according to package instructions in a pot of salted boiling water. Once cooked, drain the pasta, rinse it under cold water, and drain well.
  • Cook the beans and snow peas in a pot of boiling water for 2 minutes, or until they are tender. Then, rinse them under cold water, drain, and cut them into 3cm lengths.
  • Combine the bean mixture, zucchini, capers, onion, dill, and cooled pasta in a large bowl. Season with salt and pepper, then add the dressing. Gently toss to mix everything well. Finally, add the avocado and give it a light toss before serving.
