Sweet potatoes and green beans tossed in a savory sherry glaze, then roasted to perfection.
Ingredients:
  • 2 large sweet potatoes, peeled
  • 2 cups brown sugar
  • 1 teaspoon lemon juice
  • 0.5 cup Holland House® Sherry Cooking Wine
  • 3 tablespoons butter, unsalted
  • 1 tablespoon onions, diced
  • 2 tablespoons brown sugar
  • 0.5 teaspoon ground cloves
  • 0.75 teaspoon white pepper
  • 1 pinch thyme
  • 1 (16 ounce) package green beans whole, frozen
Instructions:
  • Preheat your oven to 400 degrees F. Cut sweet potatoes into 1/4x1/4x3 inch spears and place them in a 9x13 inch casserole dish. Add 2 cups of brown sugar, lemon juice, and 1/2 cup of cooking wine. Bake for 25 minutes, remembering to baste the sweet potatoes several times while cooking.
  • As the potatoes simmer, melt butter in a saute pan. Cook onions with 2 tablespoons of brown sugar, seasonings, and green beans. Saute for 2 minutes, pour in cooking wine, and cook until vegetables reach desired tenderness. Take off heat and keep warm.
  • Separate sweet potatoes from the basting liquid, mix with green beans, and plate for serving.
