Savor a cozy, affordable curry for chilly evenings.
Ingredients:
  • 1 onion, halved, sliced
  • 2 cloves garlic, chopped
  • 500g pork mince
  • 283g can Pataks Rogan Josh Curry Sauce
  • 1 medium sweet potato, diced
  • 150g green beans, trimmed, cut into 3cm lengths
  • 62.50 ml unsalted peanuts, chopped
  • Roti, yoghurt, mango chutney, to serve
Instructions:
  • In a large saucepan, heat oil over medium heat. Sauté onion until softened, about 5 minutes. Stir in garlic and cook until fragrant, about 30 seconds. Increase heat to high, add pork, and cook for 5 minutes, breaking up any lumps until browned.
  • Pour in the fragrant curry sauce along with 1 cup of water and bring the mixture to a gentle boil. Introduce the sweet potato, give it a good stir to incorporate, then lower the heat and cook covered for 10-15 minutes until the sweet potato is soft. Toss in the beans and continue cooking for an additional 2-3 minutes until they are tender.
  • Sprinkle peanuts over the curry and serve with roti, yoghurt, and optional mango chutney.
