Asian-inspired pork chops with ginger-plum-soy sauce served over mashed potatoes.
Ingredients:
  • 1kg orange sweet potatoes (kumara), peeled, cut into 3cm pieces
  • 1 bunch broccolini, ends trimmed
  • 20g butter
  • 1.25 gm ground ginger
  • 9.20 gm olive oil
  • 4 pork cutlets, excess fat trimmed
  • 125ml (1/2 cup) chicken style liquid stock
  • 80ml (1/3 cup) plum sauce
  • 5.30 gm soy sauce
Instructions:
  • Steam the sweet potato over simmering water for 10 minutes until tender. Add broccolini for the last 3 minutes of cooking. In a bowl, combine steamed sweet potato, butter, and ginger. Mash until smooth.
  • Heat oil in a non-stick pan over medium heat. Cook pork for 5 minutes on each side until medium or cooked to your preference. Transfer to a plate and cover with foil.
  • Combine the stock, plum sauce, and soy sauce in a pan and bring to a high boil. Cook and stir for 2-3 minutes until the glaze thickens. Serve the divided pork, mashed potatoes, and broccolini on plates, then drizzle the glaze over them. Enjoy!
