Elevate classic bangers and mash with a sweet potato twist.
Ingredients:
  • 1kg sweet potato, peeled, coarsely chopped
  • 30g butter, chopped
  • 80ml milk
  • 8 Classic pork sausages
  • 1 small red onion, cut into wedges
  • 2 x 160g pkt traditional gravy mix
  • 2 tsp thyme leaves
  • Steamed green beans, to serve
  • Chopped flat-leaf parsley, to serve
Instructions:
  • Boil sweet potato in salted water until tender, about 8 minutes. Drain well. Return to pan and shake over low heat for 1 minute to evaporate moisture. Mash with butter and milk until smooth.
  • Heat 1 tablespoon of oil in a large frying pan over medium heat until shimmering. Cook the sausages, turning occasionally, for 6 minutes or until browned and fully cooked. Remove from the pan and keep warm by covering with a plate.
  • Heat the remaining oil in the pan until sizzling. Sauté the onion until golden brown, about 3 minutes. Add the gravy and thyme, then simmer until fragrant. Remove from heat.
  • Plate the mash and beans, then layer on the sausages, gravy, and parsley for a delicious presentation.
