Prosciutto and prune sausages with sweet mash

Transform sausages into a quick, gluten-free dinner masterpiece in just 17 minutes.
Ingredients:
  • 860g sweet potato, peeled, chopped
  • 6 (about 500g) gluten-free lamb sausages
  • 18 pitted prunes
  • 6 thin slices prosciutto
  • 20g butter
  • 13.60 gm pure maple syrup, plus extra, to serve
  • 2.50 gm ground cumin
  • Steamed broccolini, to serve
  • Sliced natural almonds, to serve (optional)
Instructions:
  • In a large microwave-safe bowl, place the sweet potato and add 60ml (1⁄4 cup) water. Cover with 2 sheets of plastic wrap and microwave on High for 8-10 minutes until soft. Drain before using.
  • Cut the sausages down the center without slicing all the way through, then stuff 3 prunes inside each one and wrap a slice of prosciutto diagonally around each sausage.
  • Heat up a chargrill pan or non-stick frying pan over medium heat. Sear the sausages for 3-4 minutes on each side until they are nicely browned and cooked through.
  • Combine butter, garlic, maple syrup, cumin, and seasoning with the sweet potato. Mash until thoroughly mixed and nearly smooth.
  • Cut the sausages in half. Plate the sweet potato mash, broccolini, and sausages. Sprinkle with almonds and micro herbs, if desired. Drizzle with extra maple syrup.
