Prosciutto and rockmelon crostini with toasted almonds

Create gourmet-style finger food by topping chargrilled bread with prosciutto and rockmelon slices. Ready in just 20 minutes!
Ingredients:
  • 300g Rustic Baguette
  • 36.40 gm olive oil
  • 30g baby rocket leaves
  • 3/4 small rockmelon, cut into thin wedges
  • 100g prosciutto slices, torn
  • 30g parmesan, shaved
  • 20g almond
  • 2 tsp balsamic vinegar
Instructions:
  • Preheat a barbecue grill or chargrill on high heat. Cut the bread into 5mm-thick slices and lightly brush with oil. Grill the bread in two batches for 2 minutes on each side until charred and golden brown.
  • Arrange a flavorful medley of rocket, rockmelon, prosciutto, parmesan, and almonds on top of the bread. Just before serving, delicately drizzle the crostini with vinegar to elevate the taste profile.
