Sweet potato and maple pork sausage tray bake

Succulent pork sausages paired with aromatic maple syrup in a one-pan delight.
Ingredients:
  • 60ml (1/4 cup) extra virgin olive oil
  • 16 fresh sage leaves
  • 1kg pork sausage
  • 1 red onion, cut into thin wedges
  • 600g sweet potato, cut into 3cm pieces
  • 27.00 gm maple syrup
  • 20.00 ml apple cider vinegar
  • Steamed greens, to serve (optional)
Instructions:
  • Preheat the oven to 180C/160C fan forced. Heat 1 tablespoon of oil in a flameproof roasting pan over medium heat. Crisp up 12 sage leaves by cooking and turning for 1 minute. Then, transfer the leaves to a paper towel to drain. Enjoy the fragrant aroma!
  • In a pan over medium heat, heat 1 tablespoon of oil. Cook sausages, turning occasionally, for 8 minutes or until golden brown. Transfer the sausages to a plate. Add onion to the same pan and cook, stirring, for 2 minutes until soft. Transfer the onion to a separate plate.
  • In the same pan, heat the remaining oil. Sear the sweet potato until golden, about 6 minutes. Add the onion back to the pan and bake until the sweet potato is tender, about 25 minutes. Finally, nestle in the sausages and bake for an additional 8 minutes, or until cooked through. Enjoy!
  • Finely mince the remaining sage leaves. Mix together maple syrup, vinegar, and minced sage in a bowl. Season with salt and pepper. Drizzle over the sweet potato mixture. Bake for an additional 3 minutes. Garnish with crispy fried sage leaves. Serve with steamed greens on the side if preferred.
