Spiced sweet potato and maple bacon muffins

Light and fluffy sweet potato muffins with maple bacon - perfect for a lunchbox treat!
Ingredients:
  • 300.00 gm self-raising flour
  • 107.50 gm caster sugar
  • 2.50 gm mixed spice
  • 125.00 ml raisins, chopped
  • 100 butter, melted
  • 165.00 ml cold mashed orange sweet potato (see notes)
  • 2 eggs, lightly beaten
  • 193.13 gm milk
  • 84.38 gm maple syrup, plus extra to serve
  • 3 rashers shortcut bacon, finely chopped
  • 30.00 ml sunflower seeds
  • Pinch of ground cinnamon
Instructions:
  • Preheat your oven to 200C (180C fan-forced) and grease a 12-hole muffin pan (1/3-cup capacity).
  • In a large bowl, mix together flour, sugar, mixed spice, and raisins, creating a well in the center. In a separate bowl, combine butter, sweet potato, egg, milk, and 2 tablespoons of maple syrup. Gently fold this mixture into the flour until just combined. Spoon the batter into the prepared pan cavities, ensuring not to over-mix.
  • In a mixing bowl, mix together the bacon, sunflower seeds, cinnamon, and the leftover maple syrup. Spoon a small amount of the mixture onto each muffin. Bake until golden and slightly firm, about 20 to 22 minutes. Allow to sit in the pan for 5 minutes before transferring to a wire rack. Enjoy warm or chilled, with an extra drizzle of maple syrup on top.
