Sweet potato and date cake

Spiced sweet potato and date cake with zesty orange cream cheese icing.
Ingredients:
  • 400g self-raising flour
  • 220g brown sugar
  • 2.50 gm mixed spice
  • 1.25 gm bicarbonate of soda
  • 750.00 ml grated gold sweet potato
  • 16 fresh dates, seeded, chopped (about 1/2 cup chopped dates)
  • 250ml vegetable oil
  • 3 Free Range Eggs
  • 2 tsp finely grated orange rind
  • 125g cream cheese
  • 50g butter, softened
  • 80g icing sugar mixture
  • Orange zest, to serve
Instructions:
  • Preheat your oven to 180C and prepare a 20cm round cake pan by greasing and lining it.
  • In a large bowl, mix together flour, sugar, mixed spice, bicarbonate of soda, sweet potato, and dates. Create a well in the center. In a separate bowl, combine oil, eggs, and orange rind. Pour this mixture into the flour mixture. Stir until thoroughly combined. Transfer the mixture into the prepared pan.
  • Bake for 1 hour or until a skewer comes out clean when inserted in the center. Allow it to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
  • Combine cream cheese, butter, and icing sugar in a bowl and beat with an electric mixer until light and fluffy. Spread over the cake and sprinkle with orange zest.
