Green bean and radish salad with basil dressing

Creamy avocado complements the crisp green beans and radishes in this vibrant salad.
Ingredients:
  • 500g green beans, trimmed, halved
  • 1/2 red oak lettuce, leaves separated
  • 1 bunch radishes, trimmed, thinly sliced
  • 1 avocado, chopped
  • 36.40 gm olive oil
  • 40.00 ml white wine vinegar
  • 5.00 gm caster sugar
  • 2 tsp finely chopped fresh basil
Instructions:
  • Bring water to a boil, then cook beans for 3 minutes until tender. Drain and refresh in ice water, then pat dry with paper towel.
  • Prepare the Basil dressing by combining oil, vinegar, sugar, and fresh basil in a screw-top jar. Season to taste, secure the lid, and shake vigorously to blend flavors. Serve over a bed of lettuce, radish, beans, and avocado. Enjoy!
