Vibrant radish and tangy Persian feta create a flavorful salad explosion.
Ingredients:
  • 200g green round beans, trimmed
  • 1 bunch radishes, washed, trimmed, thinly sliced
  • 2 (about 350g) baby fennel bulbs, trimmed, halved, thinly sliced
  • 1 baby cos lettuce, leaves torn
  • 45.50 gm extra virgin olive oil
  • 52.50 gm fresh lemon juice
  • 1 small garlic clove, crushed
  • 1 tsp dried mint leaves
  • 90g Persian feta, crumbled
Instructions:
  • In a heatproof bowl, pour boiling water over the beans and let sit for 2-3 minutes until bright green and crisp-tender. Drain and cool under cold running water. Cut the beans in half and combine with radish, fennel, and lettuce in a large bowl.
  • In a jug, mix together oil, lemon juice, garlic, and mint. Drizzle the mixture over the salad and gently mix. Transfer the salad to a serving dish and sprinkle with feta.
