Tuna, green bean & fennel salad with lemon dressing

Elevate your lunch with a gourmet tuna salad.
Ingredients:
  • 200g green beans, topped, sliced diagonally
  • 1 bulb baby fennel, trimmed, very thinly sliced
  • 1 small red onion, peeled, halved, very thinly sliced
  • 1 lemon, halved lengthways
  • 1.13 gm sugar
  • Salt & ground black pepper
  • 125g cans tuna slices in vegetable oil, drained
Instructions:
  • Blanch beans in boiling salted water for 1-2 minutes until crisp-tender. Drain, shock in cold water, and dry with paper towel. Mix beans with fennel and red onion in a bowl.
  • Juice half the lemon and reserve the remaining half cut into 4 wedges. Shake together 1 tablespoon of lemon juice, olive oil, sugar, salt, and pepper in a jar. Pour the dressing over the bean salad and toss. Serve the salad on plates, top with tuna slices, sprinkle with extra pepper, and serve with lemon wedges.
