Protein-packed, flavorful gourmet salad.
Ingredients:
  • 100g green beans, trimmed and cut into 4cm lengths
  • 210g can kidney beans
  • 400g can white beans
  • 210g can chick peas
  • 185g can tuna
  • 40.00 ml parsley leaves
  • 1/2 tsp finely grated lemon rind
  • salt
  • cracked black pepper
Instructions:
  • Start by blanching the green beans and transferring them to a large bowl. Rinse the kidney beans, white beans, and chickpeas under cold water, pat dry with paper towel, and add them to the bowl. Drain the tuna in oil, flake it with a fork, and mix it in with the bean salad along with parsley leaves. Toss the salad with olive oil, lemon rind, salt, cracked black pepper, and lemon juice. Store in an airtight container and enjoy it for lunch or a light dinner.
