Whip up a quick and nutritious bean salad for a speedy midweek meal.
Ingredients:
  • 400g can cannellini beans, rinsed, drained
  • 250g cherry tomatoes, quartered
  • 250g baby cucumbers, quartered lengthways
  • 1/2 red onion, thinly sliced
  • 55g olive
  • 36.40 gm extra virgin olive oil
  • 20.00 ml balsamic vinegar
  • 425g can tuna in oil, drained
  • 250.00 ml basil leaves, torn
  • 1 avocado, stoned, peeled, thinly sliced
Instructions:
  • Combine the beans, tomato, cucumber, onion, and olives in a large bowl, then drizzle with oil and vinegar. Season and gently toss everything together.
  • Delicately combine tuna, basil, and avocado with the bean mixture.
