Watermelon enhances citrus flavors in gourmet ceviche, offering a refreshing and sweet twist.
Ingredients:
  • 300g piece sashimi-grade tuna
  • 450g piece seedless watermelon, rind removed
  • Juice of 2 limes
  • 1 long red chilli, seeded, very finely chopped
  • 40.00 ml very finely chopped Spanish onion
  • 2 witlof
  • 36.40 gm extra virgin olive oil
  • 40.00 ml very finely chopped chives
  • 40.00 ml baby coriander leaves
Instructions:
  • Dice the tuna and watermelon into small 5mm cubes, keeping them in separate bowls. Drain the watermelon before combining it with the tuna, lime juice, chili, and onion. Cover the mixture and refrigerate for 5-15 minutes to enhance the flavors.
  • Remove the bases from witlof, then arrange them elegantly on a serving platter. Drain some marinating liquid from the tuna mixture, then mix in oil and chives. Fill the witlof with the flavorful tuna mixture and garnish with fresh coriander leaves. Serve and enjoy this delightful dish.
