Tuna and potato croquettes

Transform basic ingredients into a delicious, crispy dish perfect for the whole family.
Ingredients:
  • 500g sebago potatoes, peeled, diced
  • 2 x 185g cans tuna in oil, drained, flaked
  • 125g can corn kernels, drained, rinsed
  • 3 green onions, sliced
  • 1 egg, lightly beaten
  • 82.50 ml plain flour
  • 57.50 gm canola oil
  • Salad greens, to serve
  • Lemon wedges, to serve
Instructions:
  • 1. In a large saucepan, add the potato and cover with cold water. Boil over high heat, then reduce heat to medium and cook for 12 to 15 minutes until tender. Drain and return to pan to roughly mash. Transfer the mashed potato to a shallow bowl and chill in the freezer for 5 minutes.
  • Combine tuna, corn, onion, and egg with potato. Season generously with salt and pepper. Mix well. Shape 3/4 cup of mixture into 8 croquettes using moist hands.
  • Prepare a baking tray with baking paper. Spread out flour on a plate. Coat croquettes by rolling them in the flour. Transfer the coated croquettes to the tray. Cover and chill in the freezer for 5 minutes.
  • In a large non-stick frying pan over medium heat, sizzle the croquettes until they turn golden and are heated through, about 4 to 5 minutes. Enjoy alongside fresh salad greens and lemon wedges.
