Crispy fried tuna patties with spicy apple slaw.
Ingredients:
  • 4 medium cream delight potatoes, peeled, roughly chopped
  • 425g can tuna in olive oil, drained, flaked
  • 2 green onions, thinly sliced
  • 187.50 ml dried panko breadcrumbs
  • olive oil cooking spray
  • 350g green cabbage, shredded
  • 4 green onions, thinly sliced
  • 2 medium green apples, coarsely grated
  • 1 red birdseye chilli, seeded, thinly sliced (optional)
  • 2 tsp finely grated lemon rind
  • 65.63 gm lemon juice
Instructions:
  • In a large saucepan, gently simmer potatoes in cold water until tender. Drain and transfer to a bowl. Roughly mash while still warm.
  • Combine tuna, green onion, and egg with the potato mixture. Season with salt and pepper, then thoroughly mix. Form the mixture into eight 1.5cm-thick patties.
  • 1. Preheat the oven to 200°C/180°C fan-forced and line a large baking tray with baking paper. 2. Spread breadcrumbs on a large plate. Coat patties in breadcrumbs, ensuring to shake off any excess. 3. Spray both sides of the patties with oil and place them on the prepared baking tray. 4. Bake for 30 minutes, remembering to turn the patties halfway through cooking, until they are golden brown and heated through.
  • For the Spicy Apple Slaw, mix cabbage, onion, apple, chili, and lemon zest in a large bowl. In a separate small bowl, whisk together lemon juice and oil. Season with salt and pepper. Drizzle the dressing over the cabbage mixture and toss well to combine. Serve the patties with the slaw.
