Boost Omega-3 intake with a simple tuna and mixed bean dish.
Ingredients:
  • 2 x 185g cans tuna in springwater, drained
  • 750g can four bean mix, drained, rinsed
  • 4 tomatoes, deseeded, chopped
  • 2 large celery sticks, trimmed, finely chopped
  • 1 small red onion, halved, thinly sliced
  • 250.00 ml flat-leaf parsley leaves, chopped
  • 1 large lemon, rind finely grated, juiced
  • 1 garlic clove, crushed
  • 18.20 gm extra-virgin olive oil
  • 2.50 gm caster sugar
Instructions:
  • In a large bowl, combine flaked tuna with beans, tomato, celery, onion, and parsley.
  • Prepare the zesty lemon dressing by combining lemon zest, 2 tablespoons of lemon juice, minced garlic, olive oil, and sugar in a sealed jar. Shake vigorously until fully mixed.
  • Drizzle the dressing over the salad, sprinkle with salt and pepper, mix well, and enjoy.
