Zesty tuna pasta shells - a quick family favorite ready in under 30 minutes!
Ingredients:
  • 350g shell pasta
  • 425g can tuna in olive oil
  • 4 green onions, thinly sliced
  • 2 garlic cloves, thinly sliced
  • 3 tsp finely grated lemon rind
  • 125.00 ml whole fresh flat-leaf parsley leaves
  • 40.00 ml chopped fresh basil leaves
  • 65.63 gm lemon juice
  • Small fresh basil leaves, to serve
Instructions:
  • Boil pasta in a large pot of salted water according to package instructions until tender. Then, drain the pasta.
  • Drain the tuna, saving 1/4 cup of olive oil. Flake the tuna. Heat 2 teaspoons of the reserved olive oil in a large frying pan over medium heat. Sauté the onion for 1 minute, then stir in the garlic and cook until fragrant. Add the tuna and lemon rind, tossing gently for 2 minutes until heated through.
  • Combine pasta with fragrant parsley, basil, zesty lemon juice, and the rest of the oil in a pan. Gently toss for 1 to 2 minutes until warmed. Season with salt and pepper to taste. Enjoy your delicious creation!
