Quick tuna and lemon rice

Whip up a delicious tuna and lemon rice dish in just 20 minutes for a quick and satisfying meal!
Ingredients:
  • 1 onion, finely chopped
  • 1 clove garlic, crushed
  • 2 x 250g pkts Brand Microwave Brown Rice
  • 510.00 gm chicken stock
  • 100g spinach leaves
  • 187.50 ml shredded parmesan, plus 187.50 ml extra, to serve
  • 425g Brand Tuna Chunks, drained
  • 1 tsp lemon zest, plus extra lemon wedges, to serve
Instructions:
  • In a medium saucepan, heat oil over high heat. Sauté onion and garlic until softened. Add rice and stir to coat for 1 min. Pour in stock gradually and cook until rice absorbs most of the liquid. Remove from heat.
  • Set aside 1/2 cup of fresh spinach leaves for a beautiful finishing touch. Mix in the rest of the spinach, Parmesan cheese, tuna, and lemon zest. Keep stirring until the spinach wilts. Transfer the dish into serving plates and sprinkle the reserved spinach leaves, Parmesan cheese, and lemon wedges on top. Enjoy!
