Pasta with Tuna Sauce

Quick and tasty tuna pasta with tomatoes, garlic, parsley, and lemon - ideal for a hectic weeknight!
Ingredients:
  • 1 (16 ounce) package penne pasta
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves crushed garlic
  • 1 (14.5 ounce) can crushed tomatoes
  • 1 tablespoon capers
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh parsley
  • 0.25 teaspoon red pepper flakes, or to taste
  • 2 (5 ounce) cans tuna, drained
Instructions:
  • Bring a large pot of salted water to a boil. Add penne and cook until al dente, stirring occasionally, 10 to 12 minutes.
  • In a large skillet, warm oil over low heat. Sauté onion and garlic until onion is tender, approximately 5 minutes. Add tomatoes, capers, lemon juice, parsley, and pepper flakes. Cook gently until the sauce thickens, around 3 minutes. Gently mix in tuna and heat through.
  • After cooking penne, transfer back to the pot. Top with sauce and mix until pasta is well coated.
