Impress with a speedy tuna pasta dish bursting with flavors of capers, tomatoes, and fresh herbs - ready in just 30 minutes!
Ingredients:
  • 0.5 (16 ounce) box penne
  • 1 (5 ounce) can tuna, packed in olive oil, drained
  • 0.25 cup olive oil, divided
  • 0.25 cup finely chopped fresh basil
  • 0.5 large organic lemon, juiced and zested
  • 1 ounce canned anchovy fillets, drained
  • 2 teaspoons capers
  • 1 clove garlic, thinly sliced
  • 1 (14.5 ounce) can diced tomatoes
  • 0.5 bunch fresh parsley, finely chopped
Instructions:
  • 1. In a large pot, bring salted water to a boil. 2. Add penne and cook for about 11 minutes, stirring occasionally, until al dente.
  • In a bowl, combine tuna and mash with a fork while pasta cooks. Stir in 2 tablespoons of olive oil, along with basil, lemon juice, lemon zest, salt, and pepper.
  • In a large skillet, heat the 2 tablespoons of olive oil and fry the anchovies for 3 minutes. Stir in capers and garlic, cooking for another 3 minutes. Finally, add the tuna mixture and tomatoes, and let the sauce simmer for approximately 5 minutes.
  • After cooking the pasta, gently blend it with the flavorful sauce. Ensure a perfect fusion by incorporating a generous amount of fresh parsley right before serving.
