Quick and tasty recipe perfect for lunch, paired with a fresh green salad and crusty bread.
Ingredients:
  • 500g spaghetti
  • 80mls (1/3cup) virgin olive oil
  • 1 bunch parsley, chopped
  • 2 garlic cloves, finely chopped
  • 1 small fresh red chilli, finely chopped
  • 2cm piece fresh ginger, peeled, cut into thin strips
  • 1 425g can crushed tomatoes, undrained
  • 1 425g can tuna in oil, drained, broken into chunks
  • Salt & ground black pepper, to taste
Instructions:
  • Boil the pasta in a large saucepan of salted water following the instructions on the packet until it is cooked firm but not soft. Then, drain the pasta.
  • Heat olive oil in a saucepan over low heat. Set aside 2 tablespoons of chopped parsley. Add the rest of the parsley, garlic, chili, and ginger to the saucepan. Cook for 1-2 minutes until aromatic. Mix in tomatoes and cook over medium heat for 5 minutes, stirring occasionally. Add tuna, season with salt and pepper. Toss in drained pasta. Serve immediately, garnished with reserved parsley and pepper.
