Bow Tie Pasta with Tomato Tuna Sauce

Whip up a quick and delicious tuna and bean pasta using pantry staples like canned tuna, beans, tomato sauce, and bow tie pasta.
Ingredients:
  • 1 (16 ounce) package farfalle (bow tie) pasta
  • 0.5 cup whole wheat bread crumbs
  • 1 tablespoon salt
  • 0.5 teaspoon ground black pepper
  • 1 tablespoon lemon zest
  • 1 (15 ounce) can canned beans
  • 1 (5 ounce) can tuna, drained
  • 2 cups tomato sauce
  • 0.75 cup grated Parmesan cheese, divided
Instructions:
  • Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  • Boil pasta in a large pot of salted water until al dente, about 12 minutes. Drain thoroughly.
  • In a large skillet, warm the olive oil until aromatic. Add bread crumbs and toast for roughly 2 minutes. Season with salt, pepper, and incorporate fragrant lemon zest. Transfer the seasoned bread crumbs to paper towels to drain excess oil.
  • Return the skillet to medium heat, then incorporate the beans and mash them. Add the tuna, tomato sauce, and 1/4 cup of Parmesan cheese. Turn down the heat to a simmer and cook for 10 to 15 minutes.
  • Mix sauce with cooked pasta and transfer everything into a baking dish. Sprinkle the top with toasted bread crumbs and the remaining 1/2 cup of Parmesan cheese. Bake in a preheated oven until the cheese is melted, for approximately 10 minutes.
