Three-Pepper Pasta

Vibrant, low-calorie bow-tie pasta with tomato and bell pepper sauce.
Ingredients:
  • 4 cups uncooked farfalle (bow-tie) pasta (8 ounces)
  • 1 tablespoon olive or vegetable oil
  • 2 small green bell peppers, cut into 1/4-inch strips
  • 1 small red bell pepper, cut into 1/4-inch strips
  • 1 small yellow bell pepper, cut into 1/4-inch strips
  • 4 cups tomato pasta sauce (any variety)
Instructions:
  • Prepare the pasta according to package instructions, then drain.
  • As the pasta cooks, warm oil in a 10-inch nonstick skillet over medium heat. Saute bell peppers in the oil for about 5 minutes, stirring occasionally, until they are crisp-tender.
  • Combine the pasta sauce with the peppers and let simmer without a lid for 15 minutes. Serve the sauce over pasta.
