Three Pepper Pasta Salad

Colorful bell peppers and tricolor pasta coated in a zesty olive oil and vinegar dressing.
Ingredients:
  • 1 (16 ounce) package tri-color pasta
  • 0.66666668653488 cup olive oil
  • 3 tablespoons white wine vinegar
  • 0.25 cup fresh basil leaves
  • 2 tablespoons grated Parmesan cheese
  • 1.25 teaspoons salt
  • 1 red bell pepper, julienned
  • 1 yellow bell pepper, julienned
  • 1 orange bell pepper, julienned
  • 1 medium fresh tomato, chopped
  • 1 (2.25 ounce) can black olives, drained
  • 8 ounces mozzarella cheese, cubed
Instructions:
  • 1. Boil a pot of lightly salted water. Add pasta and cook for 8 to 10 minutes until it's al dente. Drain the pasta.
  • Combine olive oil, white wine vinegar, basil, Parmesan cheese, salt, and pepper in a blender or food processor and blend until smooth.
  • Combine cooked pasta, dressing, red, yellow, and orange bell peppers, tomato, and olives in a large bowl. Finish with a generous sprinkle of mozzarella cheese before serving.
