Vibrant bell peppers and tomatoes on a bed of golden turmeric rice create a visually stunning and delicious dish.
Ingredients:
  • 4 skinless chicken thighs
  • 3 cups chicken stock
  • 1 onion, chopped
  • 3 cloves garlic, chopped
  • 1 teaspoon ground turmeric
  • 4 ounces fresh mushrooms, sliced
  • 12 ounces uncooked white rice
  • 3 tomatoes, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, thinly sliced
Instructions:
  • In a large pot, simmer chicken pieces in flavorful chicken stock along with fragrant onion and garlic. Once chicken is cooked, remove and set aside. Introduce the vibrant turmeric and give the stock a gentle stir before setting it aside.
  • Heat oil in a large skillet. Saute mushrooms for 1 minute. Add rice, stir for 2 minutes, then pour in stock. Let it simmer for 20 minutes. Skin and slice tomatoes, then add to the skillet. Cut cooked chicken into bite size pieces and add to the skillet with red, green, and yellow bell peppers. Simmer over low heat, while stirring, until liquid is absorbed and rice is fluffy and separate.
